Cafe Rio! Salad/Burrito

For the Salad

1 Large Flour Tortilla
1/4 cup Rice (Rice a Roni Spanish Rice)
Note: Don't add the can of tomato's
1/4 cup Black or Pinto Beans
1/4 cup Sweet Pork (see recipe below)
2 cups shredded Romaine Lettuce
1 tablespoon guacamole
1/4 cup Pico De Gallo
1 tablespoon Parmesan Cheese
Note: for Tiffany use Shaky Cheese!!! lol
A few stems of Cilantro leaves
Top off with crunchy tortilla strips
Creamy Cafe Rio Dressing (See Recipe below)

Layer all ingredients together in the order they are written down. Enjoy!!!


FOR THE BURRITO




Layer Ingredients


1 Large Flour Tortilla
1/2 Cup Spanish Rice
1/4 Cup Black or Pinto Beans
1/2 Cup Sweet Pork
1/4 cup red Enchilada Sauce
1 Tablespoon of sour cream

On one side of the tortilla layer the rice, beans, pork and roll up burrito style. Pour enchilada sauce over the burrito and broil on low for 5 minutes. Top off with sour cream. Serve with a side salad.


I made this and had so much fun!!! Brad came home from work and told me he thought I went out and bought dinner because it tasted exactly like Cafe Rio. It was really good!!! I hope you enjoy making this one as much as I did!!!

MYSTERY!!!


There are always a bunch of cats wandering outside our apartment building. We usually try to go pet them but they aways run away. So Last night Brad and I were walking outside our apartment building to go swimming. There were a few cats so I tried like normal to go touch one. They all ran away...except one cat. This cat ran to us and immediately started to purr. She was meowing really loud. So we decided to take her to our apartment for a few minutes to give her some tuna fish. Then we went to the pool and she followed us. She left while we were swimming and then on our way back to the apartment she followed us home. She wanted to come in. So we let her in once again. We didn't know what to do because she was so cute. Brads allergies started to kick in so we let her outside. She stayed by our porch for a while and then left. We called her mystery because we have no idea where she came from.


Mystery was really cute. It made me want an animal. But right now we cant afford one so we will just have to continue to try and play with the cats out side.

MS 100 Mile Bike ride.




A Quick trip to Logan Utah. Brad Wanted to ride 100 miles before he rode Triple Bypass with his Dad, Uncle and cousins in Denver CO. So he signed up to ride this race two weeks before the race. We found the last hotel room in the whole city the day before the race. We were lucky. But when we got to the hotel the room that we got the AC unit was broken so we had to wait several hours for them to try and fix it. It got so sick of waiting that I made them give us a different room. Then we went and found a yogurt stop for a treat.

I couldn't believe how many bikers there were riding. It seemed scary to me when they all took off. I thought for sure they were all going to crash into each other.


At the beginning of the race I decided to follow the race...BAD IDEA!!! I thought the bikers were going to kill me. They took up the entire road and would not let me pass them half the time. They were supposed to obey all traffic laws and they didn't. So I decided to drive to the lunch stop so Brad and I could eat together. I took a nap there until he arrived. It would have been smart to bring a book or something. When Brad got there he wasn't even hungry, so he decided to wait for about 5 mins and then he took off again. So I drove back to the finish line so I could cheer for him at the end. But I missed it. He finished the race and then called me. haha. So we walked over to the finish line to take a picture there.
This is at the finish line. Brad just got done with his first 100 mile ride. and he did it in only 5 hours!! GOOD JOB BUNNY RABBIT!! I LOVE YOU!!!

Universal Technical Institute!



Brads New School!!! Universal Technical Institute!! We took a tour of the school with my parents while they were here in Arizona. My parents now know why this is Brads choice school. It screams Brads name!!! He absolutely loves going to school here.


Here are some of the different cars he will be able to learn how to work on. He is super excited!!!



This is one of the many shops at the school. They all have all the tools you need to work on the cars at the school. Brad cant wait to get his hands on the cars! All of the cars that are at the school are donated to the school for the students to learn.

Our first Anniversary!!!




Our first anniversary was Awesome. We just moved to Arizona literally. We got to Arizona on Tuesday July 13th and moved our stuff in on Wednesday. We were able to hang out with my parents because they helped us move here. I can't tell you how thankful I am for that. They are the best!!! My mom actually surprised me. I had no idea she was even coming. Anyways...Back to our anniversary. It was on Saturday July 17th. We had no idea what to do because we had no Jobs and no money. But thanks to SIMNAR Brad was able to get a bonus on his last check. Thanks SIMNAR!!! So Brad took me to a restaurant near our apartment. It's called Claim Jumper. I got a BBQ chicken Pizza and Brad got a fully loaded stuffed potato. I couldn't believe how big that thing was.
After dinner we brought home a Cheesecake for desert and shared it later. Then we spent some alone time together. It ended up being a great first anniversary together in out new home here in Arizona!!!

BAKING!!!



The Joy of cooking!!! Ever since I have moved to Arizona I have found a love for cooking. Brad enjoys it too. W don't have much in the fridge but with what we have I have made some delicious meals. It just takes a little creativity. Sometimes I am not so lucky in what I find or make but I have fun trying.

When Angela came to visit me she helped me make some homemade strawberry jam and it was delicious!!! Thanks Angela. You are the best.
I have also was daring and made my first homemade Bread...I was a little scared because this is something I never learned how to do. But I have realized that making Bread was easy.
Here is my first bread ever made!!!



I also made some delicious rolls for a work pot luck. And bought along some of that delicious Jam. They were impressed.



Some of my other Creations that I forgot to take pics of are; Homemade BBQ chicken pizza. Brad said it was the best homemade Pizza he ever had. At first when I brought it to him for dinner at school he thought I had ordered it from a restaurant. When I told him I made it, he was impressed. We decided to make it our own little family tradition to have homemade pizza every Friday night. This Friday I made a combination pizza. That was good too.

The other night I made sweet and sour chicken with veggies on a bed of brown rice. I am surprised that I made the sauce from scratch. Who new the recipe would call for ketchup? That was yummy too. This recipe was cheap and it only took me about 30 minutes to prepare.

Hmmmm...I cant remember anything else at the top of my head but if I find something that is really good. I will post the recipe.

ARIZONA!!!

So it has been a while since I last wrote on this blog thing...I usually spend most of my time working, cooking, cleaning, reading, and watching movies off of netflix. Since School started for Brad I hardly ever get to see him. His schedule consists of; work in the morning (7:30), lunch from 12:30pm to 2:00pm, then school from 2:15pm to 8:30pm in the evenings. The only day off during the week is Saturday. He does have Wednesday mornigs off from work. And its looking like in order for us to pay the rent and other necessities I am looking for another part time job. I found a job opportunity on-line teaching dental assisting at a college for the evening class. I actually think this would be fantastic. It would look great on my resume. Now I just wait for the interview.

Arizona is HOT!!! Brad says he is use to the heat but I think he is just trying to show off. I have talked to people who have lived here their whole life and they are still not use to it.

Here it goes!!!

Things are moving by so fast. Last weekend Brad and I moved out of our apartment in Kaysville. We moved in with mom and dad For the last few weeks we are here in Utah. Tiffany and Kyle also moved in about 1 week before us. Things are going good. Its fun to be here!!! Dad got sick on tuesday, Kyle on wednesday and me today. Yuck. But we are surviving. I havew found a great Dental office in Phoenix. The Doctor is great. They are flying their front office manager out to Utah on Manday to meet with me. I am hoping I am the one for them. The office is Beautiful and the Staff already seems great!!!! This Doctor seems to know what he is doing. I love that I have the chance to proove myself to them. I don't want to let this one slip through my fingers.

A few weeks ago I was stressed about finding a Job in Arizona, but today I feel much better about it. Brad also has been persistant to find employment working for the Vitimine Shoppe. He really wants to work for them. He would LOVE IT!!! He is all about it. I think he would be great at it.

Well a couple more weeks and we are gone!!! YAHOO!!!

Moving

So less than 8 weeks now until we move to Arizona. So much is happening right now and it seems like we just can't keep up with it all. Brad and I are really stressed and I think it's making us both really sick. We are both so tired when we get home at night. I have decided that trying to alwyas have a clean house is not worth it. I would rather be lazy and sleep all day. But needless to say we are SO EXCITED to move. We don't want to wait any longer. I have passed 2 out of the 3 tests I have to take so far so I can work as a Dental Assistant in Arizona. My last test is on May 28th. I will let you know how that goes. HMMMM... Well I am tired. I think I will go to bed early tonight. BYE!!!

ARIAONA HERE WE COME!!!

This is a Tree that I found on our way driving to Arizona, she was all by her self. So I decided to name her Emily!!! Tee hee!!!
While we were there we went to a country town and got arrested. So we decided to make out.






This is in the Mall in Arrowhead that I will work at in the Dental Office. And I get 15% off at every store in the Mall So we decided that when we get down there we are going to buy a DOG!!!

This is the Dog we want, we named her Bellah. she is Beautiful she has one Blue eye and one Black eye. So cute. She loves me!!!




In Arizona they have the largest BMW car lot in the USA. Brad wants to work there. He is standing by one of the cars that he will have in this life time...so he tells me!!!!








Is Arizona there is so many cool places to eat. We tryed just a few great places. Brad thought he would try and fit in with the locals there!!! They Liked him!!!

Halloween 2009











Sorry Everyone for the LONG time since I have posted so Here is Halloween from last year. BRad was Pirate and I was a Gypsy. We went to a Dance a Weber State and also to a Murder mstery Dinner. Fun time.

So Brad and I had the greatest opportunity to go to the Muse concert in March. They are the best performers in the world. They brought their two million dollar set. It all came in three huge truck loads. It was amazing. They had Three Massive towers with LED lighting and had the coolest light show going on. They are one of Brad and I favorite Band. Welp!!! UPDATE!!!

Well It has been about two months since I had my surgery. I have been having lots of stomch pain since my surgery. I have been to a Series of Specialists and Doctors. I am so sick of getting poked by needles. A few weeks ago I had my stomach scoped to see if I had any ulcers so they had to put me asleep for that. And the bill for that procedure is ridiculous. Just got it in the mail yesterday. Then last wednesday I had to have an MRI done to see if they had left any gaulstones in my bile ducts. I got the results today "everything was normal." I just cant wait to see how much that bill is going to be? People at work keep teasing me. They say "Poor Brad he married a medical bill." I am beginning to find that it is true. So I have decided that I am just going to let my stomach keep hurting and just learn to live with it. I just hope that I get a sweet check form the Bayer company if they ever decide to stop selling YAZ!!! I am greatful that I have a wonderful Husband who takes really good care of me. He is so wonderful and I love him so much. We will be married seven months on the 17th. Crazy how fast time goes by. Anyways. I will be posting pics up soon. I just need to get my pics downloaded to the computer first. hope yall are doing good. Love ya!!!

Recovering

So I had my surgery last thursday. I am doing much better. I am still taking pain medicine a few times a day. For the most part I satyed in bed. People from our ward and family mebers brought Brad and I lunches and dinners so I didn't have to cook or clean dishes. It was nice. So Thanks so much to all of you who helped out. Saturday I had my Mom, Grandma, Kristy and the boys over to have our little family christmas early. Really it was just to get together. I was a little loopy that day and was sick that morning. My Mom took me shopping on monday to get Brad a Christmas Gift. It wasn't much but I think he will like it. Then I went straight back to bed, it was too much of an adventure for me. My scars are still bruised and sore but they are looking better. The Dr. told me that they were unable to check the rest of my bile duct that go to my liver becase they had a lot of scar tissue built up, he could not get the cath in them to place the dye. But the Dr. didn't seem worried about it. So I will ask him when I go in for my PO check on the 30th. Anyways I am doing ok. Brad has been a BIG help. Thanks Baby Cakes!!!

Surgery!!!

So I went to my General Surgeon on Wednesday. He wanted to get me in right away because how bad my gaullstone is but he didn't have room on his schedual till Tursday the 17th of December. So next week I go in to have my gaullbladder removed. He told me it will be a life style change. It will take about a week to recover but I will still be recovering for several months. The infection will have to drain. The only problem is being newly wed and have to come up with lots of $$$$$$ to pay for the surgery. We will figure it out though. We have family and the Lord on our side. Anyways I will update you on the rest later. Love yall!!!

GAULLSTONE???

So last saturday night Brad and I went on a date to the new fun center in kaysville called "Boondocks." We looked around and had dinner there it was fun. After we went over to Jessicas house to play with a few friends and we all decided to go get so goodies at walmart. My stomach stated to hurt, the usual pain I normally get on a day to day basis. But this time it got really bad I could hardley move. We left early and Brad tried to find an Instacare that would see me. The only one he found was for children 18 years and younger. So I decided to deal with the pain and sleep it off. The next day the pain was still there but not as bad. Brad looked up on WebMD and put in all of my symptoms. Sure enough the first thing that came up was gaullstones. I have never heard of it before. So I made a Dr. Appointment and told him all of my symtoms. He told me it was probably acid reflux or ulcers...What an idiot. I knew he was wrong so I asked him if I could rule out the gaulbladder first so he schedualed me for an ultrasound. Today was my appointment after waiting for almost two hours at the "Davis Hospital..." I finally had my ultrasound...Gaulstone. Yup it was positive. So Guess what I get to have my gaulbladder take out over the Christmas Holliday. YAhooo!!! I have a pic of my gaulstone I will try and post it later. TTFN!!!

TURKEY DAY!!!

So I cant believe we didnt take any pictures on Thanksgiving day...WHAT WAS I THINKING!!! My mom cooked a great meal. Lucky for Brad and I we didn't pig out. We only loaded one plate full. It was fun to hang out with the fam. We all got along really well. Brads neck hurt that night from goofing around with the kids. They like to jump all over him. But Brad enjoys the kids. Later that night I went to go see the movie 2012. It was good...not how I imagine the end of the world though. People it just wont happen that way, but its fun to see what Hollywood thinks about the end of the world. HAHA!!!! Anyways NM going on around here. We are boring. Welp See ya later.

UPDATE!!!

Okay okay, I am so sorry it has been a while since I have updated my blog. So I will update you on what is going on in our life. First off Brad is going to Weber State getting generals out of the way. He is also going to a tech school at night (DATC) for welding. He has been accepted to UTI in Arizona where we will be moving to next July. We can't wait. There is a job for me waiting in Phenox so I am not worried. Yahoo. He will be studying Auto and Deisel and get like 20 cetifications. So he will be the guy to go to when you car is sick. For thoes of you who keep asking...NO WE ARE NOT PREGNANT. We are waiting for a few years before we create little monsters. Tee-Hee!!! We are going to the Billy Joel and Elton John Concert on the 20th of this month. It is true Billy Joel brought us together. Thanks billy!!! I am still working for Dr. Barton in Kaysville, I will admit though I am a lot happier now that the other assistant FRAN is gone. She was most of my problem. Things are great, but I am the only assistant right now and I am pulling long shifts at work, I come home ready for bed. I hope this doesn't last much longer. Ergh. This morning I woke up feeling really sick, with muscle aches, ear ache, sore throte, and an upset stomach. Not fun. I still went to work nad pulled it off. So I will finnish by saying goodnight.
